A Yummy Recipe

We had Hip Hop Abs yesterday (sorry there was no reminder - yesterday was FULL!) and after the work-out, Kathy W. gave us a couple of recipes. I thought I would share one with you now and one with you later. Thanks for bringing recipes to us, Kathy! And, way to go all of you who came to work-out with us . . . Amanda, Arlette, Debbie, Jennifer, Kathy H. and Polly, YOU ROCK!!!

SPICY GARLIC LIME CHICKEN - A delightful chicken dish with a little spicy kick. Serve with rice and your favorite vegetables.

Ingredients:

3/4 teaspoon Salt
1/4 teaspoon Black Pepper
1/4 teaspoon Cayenne Pepper
1/8 teaspoon Paprika
1/4 teaspoon Garlic Powder
1/8 teaspoon Onion Powder
1/4 teaspoon Dried Thyme
1/4 teaspoon Dried Parsley
4 boneless, skinless Chicken Breast halves
2 tablespoons Butter
1 tablespoon Olive Oil
2 teaspoons Garlic Powder
3 tablespoons Lime Juice

Directions:

In a small bowl, mix together salt, black pepper, cayenne, paprika, 1/4 teaspoon garlic powder, onion powder, thyme and parsley. Sprinkle spice mixture generously on both sides of chicken breasts.

Heat butter and olive oil in a large, heavy skillet over medium heat. Saute chicken until golden brown, about 6 minutes on each side. Sprinkle with 2 teaspoons garlic powder and lime juice. Cook 5 minutes, stirring frequently to coat evenly with sauce.

Sunday is Mothers Day and you may not be able to Walk at Shakespeare at 4:PM Walk,exercise when you can. I will be out of town but I will be walking somewhere. I am so proud of everyone!Its been 10 days since we started and the excitment is still going strong. Thanks again to all the coaches and especially Robyn for setting up this blog.
